The point is mofo, we got there. We all know aged cabernet can be one of those unicorns, hard to find, but priceless when you do. Our producers have done the cellaring for you, so now all that’s left to do is crack these babies open (although we suggest giving them some airing time before diving in).

Bright and richly fruited, with a sophisticated dose of oak to compliment the concentration of this stunning aged cab. Cabernet quite seriously doesn't get much better than this. The best of the best barrels are selected for this top-tier release, which speaks to the depth and complexity that meets you in every glass. Rich notes of roasted coffee and cocoa meet you on the nose, with a whopping lick of baking spices and clove in tandem. We were, quite frankly, gobsmacked to get our hands on this cab straight from the cellar of this iconic Coonawarra producer, and we're confident you'll feel just the same.

Ask a Coonawarra cabernet tragic where the best cab terroir in the world is. They'll answer immediately, without blinking. And honestly, wines like this make it very hard to disagree. Seven years of bottle age have done exactly what good Coonawarra Cab does with time - the fruit has deepened and settled, the tannins have refined, and everything has come together into something genuinely compelling. That narrow ribbon of terra rossa soil in South Australia's deep south has been producing world-class cabernet for decades, and the 2017 vintage is one of the region's better recent efforts. Dark berry fruit, a classic choc-mint character that's become something of a regional signature, blackcurrant, violet and spice on the nose, and a textured, savoury palate with fine tannins and a long, persistent finish. Structured and complex without being the least bit intimidating. This is Coonawarra doing what Coonawarra does best. Drink it now with something from the grill or put it away for another five years. Either way, you're winning.

This School House cab shows the best of what the famed red clay has to offer, as it walks the tightrope between power and elegance with perfect poise. There are ripe dark fruits of plum and cassis, wrapped up in fine tannins and complimented by notes of toasty oak. It is intense, but also wonderfully balanced. We don’t need to say much more, because this is one wine that does most of the talking.

Proper regional character, proper oak, proper structure. And it's properly delicious! Blackberry, dark plum and cassis at the core, with French oak spice and a hint of dark chocolate woven through a palate that's full-bodied, structured and generous, all at once. The tannins are firm and well-integrated, the finish is long and polished, and the whole thing has a richness and elegance that makes it feel considerably more serious than the price tag suggests. Roast lamb, grilled ribeye or a mushroom-laden pasta - this wine handles all of it with ease. It also handles a quiet night in with zero complaint and utmost discretion.

Smooth. A somewhat overused word in wine circles, but if the shoe fits... A softened tannin and mouth-filling oak profile underpin everything in this wine. This wine is a BFG, Big Friendly Giant. Sure it's weighty but gee whiz, it's got a heart of gold. Rarely do you open wine when it’s in the perfect drinking window, but when you do, you really know about it. With almost a decade in the bottle, its tannins have softened to perfection. Robust and vibrant dark berries are still at the core, but the layers are opening up, offering roasted notes, cigar box, olive tapenade and mineral warmth. Cabernet sauvignon with perfectly aged, fine tannins is genuinely such a pleasure; it makes you wonder why we don’t always wait (nearly) ten years.
