Why do we love this wine?
Simple winemaking is usually the best plan when it comes to Clare Valley Riesling. You take high quality fruit, press it gently, ferment at a cool temperature and then let it rest. If you want to work in a bit of texture, as is the case with this one here, simply leave the wine on its lees for a couple of months. That’s it...that’s all there is to do. If you try to do anything more clever than that, it ends up being clunky. This does everything you want a Clare rizza to do, and more.
